How to Make Cookie Dough Chocolate Burfi in the Microwave

Ask any Indian to name their favourite sweets and I’m certain burfi will be on the list. This melt-in-the-mouth fudge is made with milk powder and condensed milk, and can be flavoured with pretty much anything that takes your fancy. Coconut, pistachio, rose, saffron, cardamom and chocolate are firm faves, with chocolate topping the list for kids. In my family, I’ve been known as a burfi monster since I was a kid. I was gap toothed, chubby cheeked and all about the sweet stuff. My wonderful masi used to make sure she had a stash of chocolate burfi whenever I went to visit on special occasions – and still does to this day. And although I’ve learned to control myself over the years, I’ll always be its’ number one fan. Diwali was always a special time in our home. Eggless Polenta and Sweetcorn Pancakes

It’s Pancake Day this Tuesday 8th March which funnily enough, automatically makes it acceptable for us to stuff our faces with stacks of syrup-drenched pancakes. I’m never one to argue when it comes to traditions like these. These sweet/savoury pancakes are made with fine cornmeal and juicy kernels of sweetcorn and no eggs whatsoever. Instead, I used baking soda as a raising agent, which makes the pancakes light, fluffy and perfect for brunch. Don’t you just love waking up to the smell of warm pancakes on a duvet day? I really love sweet and savoury flavours together, although I don’t often play around with dishes to create them. I also added mature cheddar cheese to these because I like to live on the wild side, but you could add chopped spring onions, or both for that matter. Eggless Polenta and Sweetcorn Pancakes (makes 8-10) Ingredients 120g fine cornmeal 30g plain flour 1 tsp bicarbonate of soda 2 tsp oil 3 tbsp sour cream 140g sweetcorn 140g mature cheddar cheese, grated ½ tsp salt Pinch ground white …

Eggless Milk Chocolate and Raspberry Puddings

Happy Thursday, readers. You’re probably wondering why on earth I’m posting on a weekday. No, I don’t have a day off to chillax with a steaming cuppa chai. Sob. Ingredients 200g milk chocolate, chopped finely 120ml double cream 2-3 tsp framboise liqueur Raspberries and icing sugar to decorate For the shortbread 125g butter, room temperature 180g plain flour 1 tsp lemon zest 2 drops of lemon extract (optional) 65g caster sugar, plus more for sprinkling on top of the shortbreads   Method 1. To make the puddings, heat the cream in a saucepan until just before boiling point. Remove from the heat. 2. Add the chopped chocolate and framboise liqueur to the cream. Stir the mixture very gently until all of the chocolate has melted. 3. Pour into small ramekins (they’re very rich!), top with a few raspberries and allow to cool. After around 20 minutes, place the ramekins in the fridge until 30 minutes before you’re ready to serve. 4. To make the shortbreads, preheat the oven to 150°C. 5. Cream together the butter …

Temperatures are dropping, frosty sheens are crystallising everything within reach, and the only way to hold on to your marbles is with Eggless Christmas Cupcakes. A reader took the time to email me a couple of months ago with a request for eggless Christmas cake. The ever popular fruit cake around Christmastime is imperative, so why should non-egg eaters miss out on the goodies? The festive flavours of mixed fruits, nuts and spices fill the house with the most comforting seasonal aroma whilst these pretty cupcakes bake. Simply irresistible. I wanted to create a small twist on conventional Christmas cake by making easy to serve cupcakes, but keeping the flavours traditional and reminiscent of the season was also a must. These little bites of Christmas have been iced with marzipan and white icing in the usual fashion. And although they have been loaded with dried fruits, nuts and spices, I’ve purposely kept them light and not too overpowering or dense. Happy Diwali everyone! KO Rasoi wishes you all a prosperous year full of laughter, love and light. This November, KO Rasoi was featured in the Diwali issue of the Urbanite ezine. Today’s post is dedicated to the spring festival Holi and the patron saint of Wales, St David. Today is the first day of the Indian festival of colours, Holi (which can last up to sixteen days! Now that’s my kind of festival). Tomorrow is St David’s Day (I bet Wales will be buzzing!) One way in which Holi is celebrated is through the burning of Holika, the sister of the king of demons Hiranyakshapu and aunt of Prahlada. Hiranyakshapu prayed for thousands of days and nights to Lord Brahma (the creator) in order to be granted a boon. He asked to be worshipped as God himself; to be protected from dying ‘during day or night; inside the home or outside, not on earth or on sky; neither by a man nor an animal; neither by asthra (a weapon) nor by shastra (sacred means)’.The story states that Hiranyakshapu’s young son Prahlada, a devotee of Lord Vishnu (the preserver) was ordered by his father to sit on a pyre, on the lap of his aunt Holika (who was to be …

Say Happy Valentines Day with Devils, Angels and Plenty of Calories!

So come on tell me, how many Valentines cards are you expecting this year? One? Two? Two dozen? Strolling through a busy high street with a numbing wind pinching my fingertips, I ramble past a quaint little chocolate shop. I am absorbed. I shuffle into the shop wide-eyed in merriment at the prospect of sampling the array of delightful delicacies. Shelves are chock-full of heart shaped chocolates packaged in heart shaped boxes that are tinted with deep shades of crimson and baby pink. Each box is tightly wrapped with the finest silk and organza ribbons, as if they are concealing the precious pearls of an oyster found in a cavernous, dark sea. I long to reach out and pick up one of everything, go home and eat until I cannot move. Good job the costly price tags force me to march straight out of that wicked chocolate shop which had fallen from grace. Happy Diwali From KO Rasoi!

Strolling down Belgrave Road in Leicester at Diwali time reminds me of my childhood. My friend who has lived in the city all his life tells me that when you’ve seen the lit up streets once you won’t need to see them again. But he still goes to the annual lighting show on the first night they are switched on. Something tells me he doesn’t really mean what he says about those bright and colourful lights. There’s something certainly fascinating about them lighting the way to beautiful sari shops, aroma-filled restaurants and bustling sweetmarts. I wish I could take a picture of it for you all, but as you know my photography skills aren’t quite up to scratch (yet!) Well anyway, this post was just to wish you all a Happy Diwali!
